Day 19 and so on!

So... it looks like I haven't written in a while! I do give my apologies I am been a little bit lazy!

Today I signed up for the Rondebosch park run on Saturday which I am quite looking forward to.

This week I have been eating quite well, my dad fixed my treadmill so I can finally exercise at home and do my muscle challenge which I have been neglecting a tiny bit.

I've made a few salads recently and eating avos like its nobodies business.

I am determined to start reboot on Monday and I haven't been drinking sugar in my coffee. Now just to cut the milk out... YIKES!!!

Today I ate the following...
Breakfast:
Herbalife shake with milk

Snack:
Bacon and egg muffin with green tea

Lunch:
Herbalife Shake with water

Snack:
3 Provita crunchy vites and coffee

Dinner:
Tuna and avo with tomato

Day 18

Today wasn't a bad day. I had a small cheat of a cupcake and had a salad for lunch. I even had enough juice to concoct a dinner.
Today I ate
Breakfast:
Herbalife shake with milk
Snack:
Banana and tea
Lunch:
Tossed salad with meatballs
Dinner:
My interesting omlette with leftiver meat balls.
Going to do my days exercise and be happy :)

Day 19

Friday at last!!! I can look forward to lazing around all weekend reading, my favourite thing to do!

With the weather being really crappy I was feeling like a nice warm lunch so I decided to have some Asian food. I am a huge fan of Simply Asia and just wanted something to chew. As a punishment my meal got to me being medium chilli instead of mild, needless to say I found a cure for a blocked nose. 

My meals for today isn't too bad 

Breakfast:
Herbalife shake with milk

Snack: 
Banana

Lunch: 
Simply Asia Mushroom Roasted Chilli Paste Stir-Fry

Snack: 
I don't think this will be needed as I am still full from lunch :) 

Dinner: 
Butternut soup made with sweet potato thanks to Tam. 

I'm quite looking forward to spending the night with her seen as we haven't had a girly sisters day in a while!

Omelette

Right so to make my omelette is used

3 eggs
Basil pesto
Left over meat balls (can use normal mince too)
Cheddar cheese
Feta cheese
Coconut oil
Pepper to taste

1. In a bowl mix eggs, basil pesto and pepper
2. Heat up coconut oil and pour egg mix into pan
3. Chop up cheese, feta and meatballs
4. When the egg base is a little cooked put the cheese and mince down the middle of the cooked egg mixture
5. Once there is no more runny egg flip the other side over and remove from pan
6. Serve and enjoy!

This came out amazing!

Baked Lemon Chicken

I found this recipe online and tweaked it a bit. It came out amazing! 

Ingredients
2 tablespoons mustard
1/4 cup low-fat plain yogurt
4 skinless, boneless chicken breast fillets
1 grated lemon rind from 1/2 a lemon 
1 lemon, juiced
2 tablespoons basil pesto
salt and pepper to taste

Method
1. In a small bowl mix together the mustard, yogurt, lemon rind, basil and lemon juice.
2. Place chicken fillets in a deep oven proof dish.
3. Pour yogurt mixture over chicken breasts .
4. Add salt and pepper to taste.
5. Cover and bake in the oven at 180* for 25 minutes.

Serve with a fresh green salad and vegetables.

Where are we?

Ok so I totally lost track of where i was.

I got sick after I started doing my health change and it took me more than a week to get over the nasty infection. On the plus side I did lose 4.8kgs which I am trying to keep off now that i am eating again.

I have recently started a muscle challenge which is so hard but my muscles hurt afterwards which i totally love!

Today would be day 17 of my journey and this is what I ate

Breakfast:
Herbalife Shake

Snack:
2 Provita cookies and coffee (1 canderel)

Lunch:
Mixed salad (lettuce, tomato, cucumber, feta and lemon juice) mixed with 2 boiled eggs

Snack:
Woolies slimmers choice casava chips

Dinner:
Meat balls with salad and mash sweet potato

Today is my rest day so I wont be exercising tonight  :)
